I've had some chicken nuggets (plain, buffalo, and some spinach nuggets) from some vegetarian company in the fridge section when I had a coupon that made them free, they were really good

that said I usually don't like meat substitutes that try to taste like meat, but I like a lot of the ones that try to serve the same purpose without imitating a meaty taste (for example boca burgers vs gardenburger).

Well first it should be pointed out that what you posted isn't a longitudinal study, it's a cross-sectional study. None of the things that make those longitudinal studies valid sources of data is present in the cross-sectional study you posted.
