I actually find the flavor of too-rare beef to be kinda boring. I get the flavor, but it seems... dull? I prefer to grill it to almost past rare, or to pan sear it and then heat it slowly until it's medium rare.

When it's solid pink it just seems to lose some of that sizzle.

Medium Rare seems to be the most consistently quality temperature to get someone else to cook it at, though when I cook for myself I'm just as likely to slice it thin and do it that way.

I broiled a chunk of cheapass shitty beef and turned it into extremely good spicy red bean beef, and that to me was better than eating it steak-style.

But I'm absolutely an oddball, and always have been. Foodie who doesn't like steaks much? Heresy! But give me steak in something like a fajita and I'll sing your praises.
