I have a sandwich maker (the appliance, not a woman) and I can't figure out how to make a sandwich with cheese that still allows me to add condiments afterwards. How do?

Just take it apart - do you have one that seals the edges or a panini press? If you have an edge sealer it'll be fine, just won't be sealed as well, and if you have a (god tier) panini press then it's even easier
