I love western north carolina bbq sauce. My parents have a summer home in the mountains on the edge of the Nantahala National Forest. We are from louisiana and the bbq sauce here is typically thick, molasses based, and on the sweeter end of the spectrum (all though Jack Miller's is the exception). I used to really dislike bbq until I had WNC style bbq. The way they roast their pig and their sauce is amazing.

1lb salted pork, sliced
4 spanish onions
6 cups beef broth
6 cups chicken broth
4 pounds diced potatoes
1/2 cup tomato paste
1/2 cup concentrated tomato soup
2 cups peeled tomatoes
2 cups corn
1 3/4 cup wax beans
1 cup green peas
3 cups sliced carrots
3 lbs perch or bullhead filets
sel pepper
laurel, thyme, basil and parsley

>1. Rinse the salted pork and fry it in the pan for 10 mins
>2. Add onions and cook. Then sweat the potatoes and carrots.
>3. Add the broths and cook for 10 mins
>4.Add everything else but the fish and cook for 2hrs
>5. Put the fish in a cheese cloth, drop in the pot and cook 15 mins
>Serve

For the complete experience serve with fried perch filets, bread and spanish onions slices

Posso is a doughnut-like pastry from southern harbour town Kotka, Finland. It's filled with sweet apple jam and rolled in sugar, traditionally bought from the marketplace in summer time and eaten outside.
