beets overwhelm the flavor. it's really not that great of a soup when filled with beets. pic related is what i preferred when it comes to red borscht.

either way, i always preferred white borscht, which despite the similar name is a completely different soup.

Borscht tastes like beets and cabbage. That makes it a little on the sweet side, so frequently vinegar is added to tame the sweetness down.

Made up a batch yesterday, and just polished off the leftovers for lunch.

Ukrainian Borsht > Russian Borscht

Yes, there is a big difference. Ukrainian borsht has more meat and less beet, and has tomato paste in it giving it an orange color when you add sour cream.

My slav friend makes it all the time, it's fucking awesome.

This is a different kind of dish.

It's made with this thing called kefyr, I don't know what the english word for it is, it's like old chunky milk, but doesn't taste old.

Basically, you put veggies and shit into water, then add this, mix it.

Cook a few potatoes

Put hot potatoes into soup. Taste is god tier, especially if you chop a hard boiled egg into it. I really feel bad for americans because you will never be able to taste this kind of god tier cooking
