Just went to my local butcher.

I asked for center leg cut beef bones, for marrow. He cut me some. Then he rang it up and that alone was $19, so I'm like alright man wtf is going on here. Then he grabs the lamb shank I ask for, then I pay for my crusty bread I found on a shelf.

Ok $34. Driving home going.. hmm I wonder how much he gave me in lbs of beef bones bc I asked for 6x 3" pieces. Well turns out I got like 2.5 lbs of bones and they actually look fucking AMAZING. This place has insanely high quality beef and I was assured in my head that paying $7.59/lb for beef bones was insane but these actually might end up being worth it..

The lamb shank looks dried out, no worries planning on possibly doing some tomato sauce in slow cooker with light dashing of cinnamon.

The bones I'll just roast at 450 for like 15 mins, then spread on crusty bread and put a little sea salt on top.

So what do we think. These are some big and nice looking beef bones huh? Ideas for cooking the lamb or marrow differently appreciated!

Also, just because it's hard to notice from the angel of the pciture, a lot of these bones are a good 4-5 inches tall easy.

I've always wanted to do some marrow bones, but there's no good butchers nearby. Only carnicerias, which are great if I want some Santa Maria tri-tip or carne asada, but not so good for specific cuts of meat.

Yessir. Santa Maria tri-tip is just a rubbed or marinated tri-tip, popularized in Santa Maria county. It's the only thing California ever really contributed to BBQ. It's usually grilled or smoked and ends up with this peppery, garlicky crust that pairs well with the extra-beefy flavor of the tri-tip.

I like that it cooks quick and slices easy. It's great by itself or on sandwiches.

I'm not that guy, but that's exactly what it is. Around here we call them "mexican meat markets" (at least us white guys do) and generally it's a small mexican grocer/butcher.

The ones near me seem to be mostly pre-marinated cuts of meat and stuff you could easily get at the grocer - chicken breasts and wings, steaks, etc. And of course the special ingredients for specific Mexican dishes, like tripe for menudo.

Anyways OP update here. I've gotten the lamb shank rubbed in fresh minced garlic, salt, pepper, browned on both sides, put into crock put with half a can of crushed tomatoes, dash of cinnamin, salt, pepper, and the oil/garlic/drippings from the cast iron. Got it on low, I'm thinking 3-4 hours I duno.. never really matters with a slow cooker now does it..


Anyone have any other ways of prepping or eating marrow I should know about? Additions, subtractions, things I might be able to do to spruce this meal up. My major regret right now is not having a nice bottle of red wine.. I thought I had a couple bottles but all 7 are white. Where the fuck did all my red go O.o

Ah, the ones around here carry a lot of mexican baked goods, candy, drinks, canned foods, etc. and maybe some limited produce. Bimbo stuff all over the goddamn place. Then about half of the store is devoted to the butcher where you can get all your assorted meats, and occasionally they'll have a lunch counter. They're typically smallish places in a strip center, definitely not supermarket sized.

I recommend it. It's still a rare cut of meat, it seems, outside of California. There are plenty of times when I've talked to people in other states who have never even heard of it. But I'm sure you can hunt it down.

Yep, cost of living causes the price of bones to increase. You are an idiot. The reason things like skirt steak ( a traditionally poor mexican food), shark (what used to be the poor mans fish of choice), lobster (used to be fed to prisoners on the east coast because it was cheap), and other foods like that is because they are popular and as such the producers can demand more money for it because people who have money will pay for it. It is stupid because in the past these foods were considered to be low quality and only fit for the poor but now we are having a food culture developing that likes peasant foods and is willing to pay a premium for what was once considered to be trash. Really you just proved that you are unable to either shop around or even think logically if you attribute this increase in price to a cost of living increase. `
