Waffle fries are damn good - but their only flaw is that they're often too big to dip into standard dip-sized containers. The dip has to be in a big bowl or on a plate, and if it's on a plate, then that rules out a lot of thinner dipping sauces (such as mayo mixed with huy fong chili garlic)

Overcooked steak fries are the ultimate fries.
There was a place near my home that had perfect steak fries, crispy golden exterior, soft delicious interior, and they were seasoned with some sort of seasoning salt recipe that was way better than the shit I can buy in stores. I never got their spice mixture before they closed, so sad.

I'll take thick cut chipped potatoes in a pinch, doused in malt vinegar.

I like fresh cut. At work we do steak fries cooked in the oven during prep, and finished in the fryer during service. This tends to yield the results most of the other snobs want in a steak fry. I make French fries every so often at home cut them into 1/4-1/2 inch squares, and fry them twice. The attached image are the best fries I've ever had.

dont go overboard with oil is the best way. you can easily make a batch of home fries with 3-4 tablespoons of butter (less if your just making a small batch for yourself, feel free to substitute vegetable oil if you want too) instead of drowning them in oil like most people do. the trick is once you put them in the pan, leave them alone for a good 5 minutes at least and you only need to use medium heat. people think they need to set the flame to 900000 to get them crispy.

alternatively you can roast them in an an oven until done and then run them under a broiler for a minute, toss them, and run under the broiler again for some extra crispness if desired.
