I honestly really don't care.

this might be some gimmick fad, or it might be people legitimately discovering something they didn't know, but for whatever reason, naturally or on purpose, something without gluten gets a big stamp "NO GLUTEN HUE" and soccer moms like it more.

I honestly don't mind the gluten free label at all because I just check "is this food organic" and I read the ingredient label to see if I like it or not.

depends. people have been mixing flour and making bread for a LONG time, which has, and creates even more gluten. watch the good eats gluten episode (probably don't remember the real name)

recently I and many others believe that genetically modified food drenched in round up and other poisons might be the cause of gluten intolerance.

something about the gmo foods and the poison making the lining of the stomach more vulnerable to gluten getting into the "cracks" between the cells as a very simple example, causing all kinds of problems that many people wouldn't normally have.

bunches of people switched to eating completely organic and had their symptoms go away, and then even went on to eat organic bread and pizza (long while later) and had no problems.

just something to think about, look it up before you dis me for being weird.

Actually, the screening has just been performed more often by doctors, hence the increase in prevelance. My girlfriend is Coeliac and alergic to gluten. Trust me, you don't want it, its a fucking nightmare. However, the more gluten free products available the happier I am.
