I'm making pretzels for the game and I want to know your opinion about how to make them.

Pretzels
2 1/4 teaspoons dry active yeast
2 tablespoons brown sugar
1 1/8 teaspoons salt
1 1/2 cups warm water
3 cups white flour
1 cup bread flour
2 cups warm water
2 tablespoons baking soda
2 tablespoons butter, melted
2 tablespoons coarse kosher salt
Proof the yeast, brown sugar and water for 10 minutes. Then add the salt and flours. Knead on a floured surface until smooth and elastic, about 8 minutes. Place in a greased bowl, turning to coat. Cover and let rise 1 hour.
Combine warm water with baking soda in a bowl. Cut dough into 12 pieces. Roll into thin ropes, dip into water/baking soda mix and twist into a pretzel shape on the baking sheet. Let rise 20 minutes.
Bake at 450F for 8-10 minutes, or until golden brown.
Brush with melted butter and sprinkle with salt.

While I normally make soft pretzels from scratch, my local grocery store had a game day special in their bakery that was 24 soft pretzels for $7.99. I just couldn't pass that up, they made it too cheap and easy.
