What do you think of him and his recipes, /ck/?

I've had mixed results with his recipes, but the techniques are usually good.

Beyond that, I like the food science angle he brought to his show, I don't think there's enough of that in home cooking.

Cooks should be thinking about the question of "Why do we do this just so?" and "Because that's the way we've always done it!" is not a good enough answer. Once you understand basic principles, you can apply them everywhere.

Overall, I think Alton is a force for good.

He is my favorite celebrity chef. His basic recipes are his best, the more complicated they become, the more standard they usually turn out. In this sense, technique doesn't apply to complicated, his technique is prime. I mean complicated as a large amount of ingredients making a dish that is an adaptation of something standard.

I love his style of cooking, though. I am a big math/science buff and I like the way he gives reasons as to why to cook a certain way, and what happens when you do. He is a must watch for any starting cook, and is fun to watch at the same time.

Most people consider a Chef to be someone who runs a kitchen. It's a title earned in a professional kitchen.

That said, Alton Brown is considered a professional and he runs the kitchen on set, making guest appearances at restaurants and also in his own kitchen. He has cooks and underlings who work for him. He does not take orders, he gives them. I'd say that makes him Chef.

People are just salty because he hasn't done things in the traditional way and they are upset and jealous by it.

I don't always agree with him, but I learned quite a bit. I also just about died when he was on a live Thanksgiving special and the woman (from the studio audience) who was trying to carve the turkey nearly sliced her fingers off. I've never seen someone as genuinely concerned with someone's safety. (also had a hell of a sense of humor Tweeting after Giada sliced through part of her finger.)

the brined turkey has been my family's go-to since we saw the special years ago. I don't bother due to cost and time and flavor weirdness that keeps me from using leftovers in other dishes, but it IS damn delicious.
