When I make Schnitzel, where you will need a relatively high temperature I use this method:
If you have a wooden spoon, just hold the wrong side in the oil. If you get bubbles it is hot enough

Use a thermometer - whether or not it's hot enough depends on what you're making.

If all else fail, use a toothpick: if the oil sissles when it hits, then it's hot enough for most food.

A thermometer. Come on, the answer to this question really is that simple.

There are plenty of tips for judging, like dropping a cube of bread into the oil and seeing how long it takes to brown, but they're not that reliable because they don't take into account variables like bread moisture content.

Plus it doesn't account for the volume of oil v. the amount you fry in each batch v. burner output.

If you want to learn to fry well, get a thermometer. Monitoring the actual oil temp is THE way to get consistent frying results.
