With cooking you lose some vitamin c but, most people do not exclusively eat or drink only cooked foods. You may loose a few more nutrients roasting vs boiling or steaming, but it isn't significant enough to have to consume all of your vegetables raw.

Yeah I do sometimes, it works pretty well. Carrots blend well with peppers, same reason you'll find carrot as an ingredient in many hot sauces, especially habanero ones.

tastewise the two are pretty close (not spectacular) and I rarely use either in cooking

as for competing textures, I prefer the higher water content in celery

I also enjoy the shape of celery that allows me to scoop peanut butter with it. It's hard to scoop things with carrots.

Ehh I can see where you're coming from but for me, chili is all about being able to experiment. There are so many different kinds of chili that are really good.
