My family owns a bagel shop in Cali but it doesn't sell well.

bagels in california is probably the first problem. i don't know exactly how much truth there is to the stereotype of there being a large percentage of health conscious people in california, but assuming there ARE then they know bagels are a shit ton of calories. and so theyre probably avoiding it. switch over to sandwiches with high quality ingredients and offer bagelwiches/bagels as breakfast items/on the bottom of the menu after your sandwiches. you cant go wrong with sandwiches. or maybe you can. i dont know i dont live in california nor do i own a business. good luck.

I've never really seen the big deal with bagels. The only ones I've ever had (store bought) were always chewy and flavourless. Nevr actually had a proper bagel, but I don't see how you can get that much flavour into them.

OP's pic does look delicious though, but I wouldn't go out of my way to go buy that sandwich from a shop. I don't think Cali is the right market for bagels?

Jalapeño cheddar are what I get when I visit my local bagel place. They have cheese/peppers in the dough as well as on top. Toasted with a bit of cream cheese, they are the best god damn thing.

having spent a lot of time in noah's bagels as kid and teen, I never witnessed this. if a bagel place had avocado and sprouts as an available option, it makes sense people would get it since it's rare to find it elsewhere probably. now that you mention it though, spreading some avocado on a toasted bagel with salt and pepper sounds pleasant enough. sprouts I'm not so sure about

I worked at a bagel shop in WA for a long time. I loved the Pesto bagels, people love pesto. We also had this sundried tomato cream chee that was spectacular on any kind of sammich.

We also did pizza bagels which is where we dunked the bagels in tomato sauce and filled the holes with mozerella before baking, and bagel pizzas where we proofed the dough extra long and didn't boil it, then flattened it out to personal pizza size. We got really creative with the pizza bagels. Asiago chee, etc. They sold well.

I worked at a place where we did scrambled eggs from a milk steamer (it gets plenty hot enough, and SUPER fluffy), it might be hard to put them on bagels, but you could offer some kind of scrambler cup for those watching their carbs.

-high gluten flour, very high, that flour your using probably isn't high enough
-right mineral content in the water. straight municipal tap water isn't going to cut it
-lye. you have to boil them in water containing enough lye. baking soda and egg washes is heresy and not sufficient.

Fellow Californian here. I hear/see "SoCal" and "NorCal" (the latter less often), but never Cali. All of my east coast friends say Cali though. No idea why.

As for OP, I like cinnamon raisin bagels but it's hard to find a good one. A lot of the ones I've tried have been way too sweet, sticky, or overpowering in some way or another (e.g. too much cinnamon, too many raisins). Find a good balance in your recipe and I'd be an eternal customer.

I work at my university's food court where they have Einstein's bagels, I'm able to take home a dozen or two every week for the roommates and I, they're pretty good. Wouldn't pay for them though, and not paying attention to their calories.

OP, if your family wants to do well, be accessible to college kids. Cause holy shit do they spend a lot of money. If your place comes off as trendy and local and decently good, then you can have a college kid customer base. That's assuming you're near one.
