To elaborate, I got this because I purchased $350 worth of crap from Williams Sonoma last week during the holiday rush.

Among those things I bought a Shun Classic 8-inch chef knife.

I was thinking of getting another Shun Classic and starting a little set.

I've broken down a few chickens with it. And no, I'm not going to take video evidence because that is asinine.

First time I broke down a chicken with this knife, I found I was shaving parts of the bone.

This is a 7-inch utility knife.

It's got a funky serration pattern. They dub it "dual density". It is fucking sharp!

Not gonna talk shit, but If i'm honest Shun does have a few knives that make no sense. That dual density, rocker, triangle blade, and the talon paring knife make no sense to me.

The ultimate utility blade makes very little sense because it seems to only be good for making a sandwich and spreading mayo.

You confident in your purchase? What is that knife's intended purchase?

The "talon paring knife" is a bird's beak paring knife. It traditionally is used for cutting tournes, fluting mushrooms, and other decorative and delicate work.

What doesn't make sense about it? It's a cutting machine on steroids.

Why serrations? Because serrations improve cutting ability. The tips of the serrations provide single point penetration at the same time the center of effort rotates around each serration for an infinite number of cutting angles, increasing the cutting edge length by up to 24% (Diagram B). A serration is a sharpened recessed curve along the edge of the blade and has more linear cutting surface than a straight edge in the same space (Diagram A). And, serrations improve edge retention because the tips initiate the cut easing the amount of force required by the recessed edges. The points actually protect the sharp inside curves that continue the cut, thus the curves have less wear over time.
