Sadly, the only way I can get fresh crawfish (crayfish, whatever you want to call them) is by ordering them live, which is obviously pretty expensive. My local grocer has frozen ones for around $15. Will a boil turn out okay with frozen ones? Also, any suggestions on how to make a great crawfish boil? Thanks.

>> No.5018453

I was actually going to do this before plans fell through. My local grocer has massive boxes of mudbugs, shrimp, and shellfish both whole and meat-only (not to mention everything else known to man).

It'll be "ok", but not as good obviously. If you have to do a boil with frozen shellfish, make sure you do it in some good stock with some nice sausage.

ive never had frozen boiled crawfish, but it doesnt sound appeasing......

can't you just wait till its in season?

there is something magical about a huge crawfish boil, but i could never bring myself to do it with frozen ones. the tail meat might turn out ok but i would worry about the head liquor being lost, which is the flavor.

You know what's hilarious? I still haven't actually used my mug. How fucking retarded is that? It's in my tea cabinet, and I stare at it, but I STILL haven't used it. I'm a freak, yes, I realize this.
I'm doing just fine, hope you are too! You've been cooking up a bunch of good food, I'd bet. Your dishes always looked so delicious!

Hey! So you live closer to me now, lol. (I live in NorCal.) Yeah, the wine.....well, welcome to wine country, LOL. I mostly drink wine nowadays, because it's so ridiculously cheap here (and, it's a nice drunk too). Yep, still cooking as much as I can. I'm about to go wicked on baking stuff, since the holiday is coming up. Sunday is going to be my mega-bake day, all day long. Cookies, Kolaches, Pralines, and probably some toffee too, if I have time, lol.

Ha, I forgot to say, I guess it's time for me to give up the ghost and drink out of my mug, LOL. I'll do that in the morning with my tea. :)

OP here. Is there any kind of sausage you would suggest? Andouille seems like the most popular one, but I'm not a fan of the taste.

>> No.5019179

I'm from Maryland, so we have a lot of crabs and stuff but I've never had crayfish, how do they taste?

>> No.5019182

I live in Philadelphia.
I can find live crayfish/crawfish/mudbugs for sale $3/lb here. Frozen is $2/lb and frozen meat is $3/lb.
I usually buy frozen crayfish meat only when I'm making crayfish balls, usually, I buy frozen whole bugs or live ones. I don't cook them boiled, per se, but certainly stewed. I boil a little water in a pot and dump some crayfish in there, then clamp and cook.
Honestly? There is a bit of a reduction in quality between live and frozen, but not so much that they can't be interchangeable. If live is 10/10, frozen is 8/10 or 8½/10.

When Cambodians here in Philamuhdelphia cook crayfish pots, they use grocery store "Italian sausage" or Hilshire Farms L'il Smokies.
Dunno why they do, but they do.

Louisiana here, don't use sausage OP. Just throw in some red potatoes with the boil along with corn.

This advice matches the boil I went to in New Orleans.
