Does anyone outside of central Texas eat these? They originate from the Czech Republic and there they are called klobasniky, but here they are called kolaches (which in the CR is a similar pastry but with fruit filling). Apparently they only put sausage in theirs but here they're filled with any kind of savory filling you can think of, and, being Texas, usually jalapenos, too. They're also the most delicious thing you'll ever eat, but for some reason I've only seen them in Texas and people from other parts of the country seem pretty ignorant of their existence. So, are you familiar with these? What's your favorite kind?

Usually the bread is always buttery and sweet, sometimes spongy sometimes flaky sometimes doughy. It's almost always a breakfast food. I've never seen a pizza filled kolache, but I've heard they exist. Most common non-breakfast types are BBQ related.

Well central Texas had a large German and Czech immigration in the 1800s, and that heritage is pretty strong in that part of the state. I have a Polish friend that works in a Polish bakery in the northeast part of the country and they told me about kolaches being a fruit filled pastry, different from what we have here in Texas. Further research led me to the klobasnek, which says is traditionally only filled with sausage. Since our immigrant population is from over 100 years ago, maybe the klobasnek isn't really a thing anymore. Maybe the kolache itself has left the Czech Republic, but my Polish friend definitely seemed to know about them.

Regardless, if you can find some try them. Good eats.

we have here tons of filled pastry and food, from pastry to various dumplings (which are differently from american ones i imagine), potato dumplings filled with meat or fruit dumplings (pic related).

The bread tends to be soft and sweet sometimes buttery. Kolaches are often sold at bakeries or places that make doughnuts.

Shipley's makes the best jalape?o, cheese and sausage. Sometimes, depends on the store.
If you ever find yourself driving around Houston, the Interstate 10 @ Kirkwood Shipley's has the best kolaches in town, hands down. No fucking contest.

Kolache Factory is mediocre, all of their sausage or egg kolaches are shit.

Krispy Kreme is shit.

Little local stores can be hit or miss.
The Viet owned ones are pretty good most of the time.

I grew up and lived in Central Texas for most of my life, and now have lived in several other states, and I've never run across kolaches anywhere besides where I grew up. I got so homesick for them I had to learn to make them myself. My favorites were always poppyseed, apricot, and sausage, of course. I'll probably make some for Christmas this year, because it's a perfect time for that. Man, I miss the food where I grew up.....

I live just outside of Austin and we actually just had these for breakfast. I had the usually jalapeño and cheese sausage type.
