Here we go. Take 2 onions and dice them really small. throw 'em in a large pot and fry them up a little. Meanwhile cut some beef fit for stews and such into chunks and fry them in a frying pan on high heat. Throw in some salt and pepper. You don't want to cook them in there, just make sure they have a nice sear. Throw in the chunks with the onions and the garlic. Add to the pot: a stock cube, some nutmeg, cloves and bay leaf. Give it a quick stir.
Now comes the part that makes it flemish stewed meat. Throw in a bottle of Belgium dark beer, like a Dubbel or a Quadrupel. Add a tablespoon of flour. Give it a stir, turn down the heat to low, put the lid on.
Now we play the waiting game for about 1.5-2 hours. Come back regurally to give it a stir (so it doesn't cake at the bottom) and check if the meat is still submerged for about 80%. This is important, because to little liquid makes the meat chewy. If you fear that there's to little liquid, just pour in some water.

Serve with Belgian thick fries and mayonaise as a condiment for the fries, though I like to use that delicious stew juice as a condiment.

Nope. And ah, I thought you were not supposed to tell not to ruin the fun. Anyway, it's from Georgia (country, not a state), and it's called adjarian khachapuri. And it's delicious. There are various recepies for them, each Georgian houselady has her own, but the basic recipe is always dough stuffed with cheese simmilar to mozzarella plus feta cheese, which is then baked untill the dough rises and the cheese melts, then you add the egg and bake it untill the eggwhite is set but the yolk still runny. Then you add a spoon of butter for maximum vein clogg and dig in.
