I don't really care so long as they aren't limp and/or soggy.
Steak fries tend to be this weird combination of both in my experience. Jbox and Burger King get it right though.
Most god-tier fries I've ever had was from these belgian waffle people that set up at street faires around my town. I'm from San Diego so I'm inclined to like my fries covered in shit too.

I'm with >>4959112 on the anything that isn't limp/soggy. Steak fries are high tier if not master race if criss cut fries didn't tend to be crispier.

I went to a pho noodle restaurant and tried their taro fries. Sweet fucking christ, taro fries are so good. They are slightly sweet and are very flavorful.
An oddity, I like putting pickles and their juice on my fries. It's similar to straight up vinegar but with a little more flavor.
