I use it as a sandwich topping and since it has a squishey blah texture, it works great if you just mix it with something to offset the texture: sausages, cooked carrots, squash, olives...

i usually shop carrots or paprika to sauerkraut. it gives ore sweet taste and less trouble in your stomach. like to eat it with pork and wurst. potatoes or yammie salads on grilled samwich bread.

Make a casserole of Sauerkraut at the bottom, a layer of fatty sausage in the middle and mashed potato on top. Bake in the oven. The kraut will cook the meats and absorb the fat.

Wash it a bit in a sieve to mellow it a little, lay it in a baking tray, put some salted/peppered chicken thighs on it, cover the whole thing with a few strips of bacon and bake it in the oven covered with tinfoil. 15mins later remove foil and turn oven on high. Remove when crisp, serve with potatoes or bread and garnish with a spoonful of sour cream.

I've been making my own sauerkraut recently. You literally just put sliced cabbage in salt water, and let it sit until it sours. It tastes very good, and you can reuse the liquid for your next batches, and sour the vegetables faster.
