For deep frying purposes, honestly, even when I have a choice, I normally go for the dark meat... White meat is... kinda bland... and easier to overcook... so sometimes end up dry and stringy. Dark meat, however, has that wonderful chicken flavor and is always moist. White meat is more suited to baking and pan/stir frying anyway.

The history behind black Americans and their love of poultry stems from the fact that slave families were usually allowed to keep a hen or two for themselves. Once the hen was too old to lay, it was salted (likely also peppered and spiced) and lightly floured before being fried in lard to give it back some of the fat moisture it lost in its old age. I don't quite recall, but I believe slave families were often given a ration of lard monthly in order to keep them fed. By the end of a hen's egglaying lifetime, enough lard would have amassed that the chicken could be slaughtered, cleaned, floured and fried.

I recommend /What the Slaves Ate/ by Herbert Covey to further read up on the diet of African slaves and how it has continued today.

The foods were passed down through generations because that's what foods do. It has nothing to do with genes.
It's called 'culture.'
With time, though, the dishes and diets change a tad according to availability of new ingredients, old ingredients falling out of favour (by being considered a famine food or low-class food, for example) or simply intermingling with other nearby cultures. It has nothing to do with genetics at all.

Example: for millenia, Cambodians have been eating prahok, a quite pungent fermented fish paste with a flavour somewhere between wine and cheese with fishy overtones and sour undertones. In recent years, however, people in Cambodia have started to consider prahok a sign of low-class and many of the lower middle and middle classes have taken to swapping it out wholesale for shrimp paste, a similar, though ultimately flatter-tasting product. Shrimp paste lacks the complexity of prahok, but has become popular amongst Khmer both in Cambodia and abroad. As such, dishes that were once made with prahok, such as somlor matchu kroeung sach mo'un, now have a different taste because they're being made with shrimp paste instead.
The culture that created somlor matchu still exists and the dish still exists but it's changed to suit the demands of contemporary Khmer. The dish was passed down from generation to generation, changing a tad from region to region (the Cham Khmer preparing it differently from Viet Khmer, for example).

Similarly, fried chicken, which was once made with old hens and barely seasoned beyond just salt and slow-fried in lard, has changed with time and is now made with more heavily spiced and seasoned younger roosters or capons quick-fried or pressure fried in oil or shortening. It was passed down and changed.
This is also why Italian Americans have a different diet from Italians as well as from other American groups such as Irish Americans, African Americans and Polish Americans.
