If I weren't feeling lazy I would dig out my grandma's homemade recipe book. Full of classic 50's and 60's midwest recipes like tuna noodle casserole and marshmallow and fruit salad

1 pkg (8oz) elbow macaroni
1/4 cup butter or margarine
1/4 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
2 cups milk
2 cups (8oz) Cheddar cheese, grated
1 large tomato, thickly sliced

Preheat oven to 375°. Cook macaroni as package label directs; drain.
Meanwhile, melt butter in medium saucepan. Remove from heat. Stir in flour, salt, and pepper until smooth. Gradually stir in milk. Bring to boiling, stirring. Reduce heat, and simmer mixture 1 minute. Remove from heat.

Stir in 1 1/2 cups cheese and the macaroni. Pour into a 1 1/2 quart shallow casserole. Arrange tomato slices over top. Sprinkle remaining cheese over top.

Bake 15 minutes, or until cheese if golden brown.

Makes 4 to 6 servings

I wonder when/how America's ideas towards food moved away from the Europeans'. I'm not trying to judge, and I know it's biased to base my thoughts on this very small selection of recipes, but you would never find anything remotely similar to these 'recipes' in a European cookbook. Anyone more knowledgeable than me care to enlighten me? I imagine the world wars and the melting pot nature of America were large factors.

It started with WWI and really took off during WWII and then the Korean War. Wartime used to really fuck up the food supply.
