Why the fuck hasn't someone figured out how to properly package and sell pre-peeled potatoes, particularly of the russet variety?

In case you haven't figured it out yet, pre-"anything" food is more expensive than it's natural state. Chicken wings are more expensive than whole chickens. Bone-in steaks are cheaper than boneless, etc.

Depends on how long ago it was peeled. The skin keeps the garlic fresh. Once you remove it it starts to lose flavor faster than it otherwise would.

Only Russet potatoes have a skin that is worth peeling anyway, and they're large enough to make peeling not too painful.

They sell cans of peeled potatoes. I'm fairly certain they also exist frozen.

The problem is oxidation. I also don't see why you can't just peel your potatoes. If you insist on doing so before they are cooked, you can use abrasive gloves or an abrasive sponge.
