Hey, /ck/.
I want to make poutine, but I live in California, so I need to essentially make everything from scratch. I'm trying to figure out how to make cheese curds, or a place I can buy them from.

Poutine is the best thing ever... My ex is from Canada, she was heartbroken to not find poutine down here. So we set about making it... The hard part was the curds.

That recipe worked beautifully. I'll make some more and take pics. You do the same. Good luck!

There are lots of dairy farms in California, just look up your city and see if there's anything close by that will sell to individuals. If you want to make your own fries that's fine, but realize that this is essentially street vendor food and nobody cares if you bake some frozen fries out of a bag.

For the gravy, do 2 tbs of flour: 2 tbs of butter in a pan on medium heat and make a blonde roux. Cook two minced cloves of garlic for 30 seconds, add one 10 oz can of beef broth and half of one 10 oz can of chicken broth to the pan. Reduce until it thickens, taste and add salt/pepper/additional spices as necessary.

Well for example here in montreal we have that restaurant called la banquise. Most of the menu consist of different poutine

Greek
Vegetarien
Hotdogs
Mexican
Mushroom
Pepper gravy

And countless other kinds. And its open 24/7 !

Please make your own fries. Poutine with frozen fries just aint right.

did you try whole foods or any other expensive "health food" store in your area? i've found they usually carry at least one kind of cheese curds, for not terribly expensive (usually <$5).

i bought some off the 5 in central CA one time but that's not really feasible if you're living in a city.
