I suppose you can take your usual chili recipe, remove the beef, add a few kinds of beans, and maybe diced peppers, celery, onion...
You might grate carrot and blend it into the brother with the chili peppers, but absolutely no chunks of carrot in there like in OP.
Maybe tomato too. I strongly recommend not having chunk tomatoes, if you add tomato try blending them. Seed them first, of course.

get a crock pot.
get a can of beans, a can of diced tomatoes, a big sweet potato, your preferred chili powder blend in your preferred quantity, a diced yellow onion, and 5-12 jalepeno, diced and seeded.
Throw all of that in the crock pot.
pour a beer over it. add a little more water if needed.
set on low. walk away.
In several hours, you will have a perfectly serviceable vegetarian chili. Despite what texan cunts might think.

i have a variety of dried beans/peas/lentils

im starting with onions in olive oil, then caramelizing them just a little. then im taking it OFF the heat and letting it cool before adding the mix of dried beans and lentils and peas, and some water ( LETTING IT COOL FIRST SO OIL DOESN'T JUMP) and simmering it for 2 and a half hours with all kinds of seasonings.

then i add some butter and almond milk and a little corn starch and flour to thicken it up.

cooking it to a soup-like consistency and maybe making some rice on the side.
