OP here. We set the temperature to as low as possible, basting the food with extra sauce as much as possible!

It was so good. As I type this I am taking a fat dump. So it was well worth it!

Sorry Americans we Brits may not be BBQ experts but we do what we can with the tools we obtain!

Also to the Suffolk guy, it depends what steaks you have! Also sometimes salt and pepper is great. But if you want to be different try some Moroccan spices!
