So I have this massive brick of cream cheese I bought for truffles, but I still have over half of it left. What are some simpler recipes I can use it in? Cheesecake is my first thought, but it's not that simple and I've never made one.
Also I'm interested in 3-ish ingredient pies (not necessarily cream cheese). Last one I made had pudding and blueberries but was more like... pudding than a pie. I couldn't slice it.

the cheese cake I make is like 8 ounces of cream cheese a container of cool whip and half a cup of sugar in a cookie crust. add in crushed oreos or whatever if you want

I just made grated apple slice, it's fantastic.

125g butter
2 tablespoons icing sugar
1 ½ cups plain flour
¼ cup self raising flour
250g cream cheese
½ cup castor sugar
2 tablespoons lemon juice
2 apples, grated

1. Grease a 25cm x 30cm Swiss roll pan.
2. Cream butter and sifted icing sugar with an electric mixer until light and fluffy.
3. Stir in sifted flours in two lots. Knead pastry quickly and gently on lightly floured surface until just smooth.
4. Spread 2/3 – 3/4 of pastry evenly over base of pan. Wrap leftovers in gladwrap and put in fridge.
5. Beat cream cheese until smooth; beat in lemon juice and sugar. Spread mixture over pastry, top with grated apple. Grate remaining pastry over the top.
6. Bake at 210 for 10 minutes, and then reduce to 190 for a further 20 minutes.
7. Cool in pan before cutting.

Measurements and temp are in metric and degrees centigrade.
