I just ate a "wet" burrito. It wasn't all that wet but it was on a plate, with some rather dry tomato sauce and cheese on it. So it was the wet kind (as opposed to the wrap type)

That sauce though, it was one of the best things I have tasted in my life. It was spicy but I am unable to identify quite what it was. How do I recreate this? What is it that I am looking for.

I guess I want a spicy and hot, rather dry tomato sauce

I don't even live on America (the continent) so fuck of with your arbitrary nomenclature. It was a burrito, and its tortilla was wet. I would appreciate if you thought me its real name if there was any universally agreed upon naming convention but it appears as though there isn't.

Semantics aside, how do I concoct a beautifully spicy, rather dry tomato sauce?

It was probably enchilada sauce, OP. If it was red and runny with no chunks I bet it was the same stuff they put on the enchiladas, look up a recipe for enchilada sauce. If it was thicker and had small chunks of onion and pepper in it then it was probably ranchero sauce. Its sort of like salsa rojo, but a little different.

I'll bet it was ranchero sauce. Just look up a recipe, make it, put it on your burrito and bake it in an oven for a few minutes. It was probably dry because they baked it to melt the cheese.

Smothered burrito is generally the accepted term. However, the sauce likely was red enchilada sauce. Look that up and see if you can't find something close to what you had.

Wet burrito is what we call them. Or just a burrito, if you go to a mexican joint and order the burrito, 9/10 times they'll ask what kind of sauce you want on it.

OP, you should try a chimichanga. Its like a burrito but its worse for you and it tastes better.

for an enchilada sauce
my mom blends: a rehydrated dry chile pepper, usually chile ancho, a grilled tomato (deskinned and without seeds), a garlic clove, and chicken broth in a blender. I used singular (one, a) because I'm not sure of the proportions.

OP, you probably had "red sauce" otherwise known as ranchero sauce. Contrary to popular belief, ranchero sauce does not taste like ranch and is a type of tomato sauce usually put on wet burritos.
