Hey ro/ck/stars, welcome to Round 5 of the Second Annual /ck/ Top Master Iron Chef Ultimate Nightmare Kitchen Survivor Challenge!

The quick and dirty:
-submissions AND voting will be carried out in the same thread.
-we will not be allowing extra days for voting, all votes and entries must be submitted by midnight of the 19th, so try to complete your dish with enough time to attract votes.
-surprise penalties and benefits will be revealed at the end of each round.
-at least one contestant will be eliminated per round, based on a weighted cumulative moving average.

Additional information can be found on the Challenge blog.

--

Voting will be carried out in this thread. Please read the voting guidelines below.

Dishes are scored out of a total 20 points, based on 4 categories (worth a maximum of 5 points each); Presentation, Originality, Appeal and Challenge Goals. You may award 0's if you feel the contestant did not meet your expectations for a category.

-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish
-Appeal: How appetizing the food looks/whether or not the dish appeals to your personal taste as a voter
-Challenge Goals: How closely the entry followed the challenge goal(s)

The distinction between Presentation and Appeal: If someone submits an artfully arranged but burnt steak as an entry, it may score high in Presentation but low in Appeal.

Copypasta Scoring Format for Lazymodo
Presentation: /5
Originality: /5
Appeal: /5
Challenge Goals: /5

The theme of Round 8 is... Cupcakes.

We only have two more rounds left in the Challenge and considering how close everyone's cumulative scores are, we can't emphasize enough how important your performance in this round is. Give us your most creative and delicious cupcake. Unconventional (non dessert) cupcakes are allowed, so long as it has some form of "frosting". Verticals are a requirement in this round.

We understand that May is not the greatest time (for any of us, really). We held the competition during the summertime last year and that also caused a lot of conflicts with people going on vacation, etc.. We don't think there is an ideal time to hold the /ck/ Challenge (fall with back to school, winter with the holidays, etc.) so we really appreciate everyone's efforts.

Oh wow, you guys....thanks so much to everyone, really. This made my day so much better, as I just spent my morning on the side of the highway watching my broke-down car get towed (they think it's the distributor), so not only thank you for liking my entry, but thank you for some needed happiness! Thanks as always to heartsonfire and dogsfordinner for their efforts and work they put into this, I know all of us appreciate your time. I'm so glad people enjoyed my entry, it was a lot of fun, (and really tasty!) and now.....cupcakes, eh? I can't wait to see what everyone does, this should be a really fun challenge. The presentation is a very close shot with a distracting and messy background. I can honestly say I wouldn't ever imagine this combination. I am really turned off by the flavor combination, the cake is starting to deflate in the center. The Icing is really thin and doesn't look appetizing, although I do like the combination of caramel and sea salt. White chocolate just seems tossed in for not reason, as does the watermelon. Please, a cross section of the cake would be nice to judge the crumb.

I just said three or under is a good variety. If someone makes more than three different cupcakes it really looks like either arrogance or like they are hiding mediocre dishes in a crowd of average food.

The organizers don't want to limit people so they say that it's fine to make several, but nobody here is going to make one perfectly flawless cupcake. So instead of hiding average food in a crowd its less arrogant to focus on doing one thing really well. If you make a lot of cakes and not one of them is flawless this time I will vote so that the extra cakes count against them not for them.

Here we go, guys, it's cupcake madness. I had a LOT of fun with this. I'm not a cupcake baker at all, so I was pretty nervous taking this on, but I tried to have some creativity and fun with it, and I just hope everyone enjoys my entry! Verticals, Close Ups, and Cross Cuts to follow! For your consideration and amusement, I present (from left to right):
- Frozen Spumoni Cupcake: An almond based cake mixed into cherry and pistachio creams and topped with whipped chocolate ganache. Garnished with cake crumbs and a fresh cherry.
- Pecan Praline Cheesecake Cupcake with Dulce de Leche Frosting: Layers of yellow cake and pecan praline cheesecake filling, topped with a cream cheese based Dulce de Leche frosting.
And finally, in honor of my home board of /ck/, who's my daily inspiration and partners in food crime, I present:
The /CK/Cake - a Doritos Locos Taco Cool Ranch Cupcake with Baja Blast Frosting: served warm, this masa and cheese based, ranch flavored cupcake has a filling of cheesy beef taco meat seasoned with Taco Bell hot sauce and Doritos Locos Tacos Doritos, and is topped with a sour cream based Baja Blast frosting.

Frozen Spumoni Cupcake (FSP): Don't know why you decided to use a bigger cup, it looks like it failed to rise (yes, I know this one wasn't even baked in the first place) with only the icing visible from the top. The cherry could have been pitted and the stem removed, it's annoying to imagine having to remove the cherry, eat it then the cupcake for something that's basically bitesized; for every single cupcake you eat.

Pecan Praline Cheesecake Cupcake with Dulce de Leche Frosting (PPCC): For some reason, it looks like some of the border of the cake removed or might be because of the cheesecake when it baked, regardless I'd rather not have a cupcake that looks like it had its border munched by someone else.

Doritos Locos Taco Cool Ranch Cupcake with Baja Blast Frosting (DLTCRCwBBF, ok, I'm kidding I'll just use DRC for Doritos Ranch Cupcake ): Looks alright except for the fact that there's a fucking doritos standing on top of it.

Originality: 3/5

FSP:A frozen cupcake is certainly out of the ordinary.

PPCC: Pecan and vanilla are nice, cheesecake filling makes it better.

DRC: Why?

Appeal: 2/5
FSP: It's frozen cream topped with more cream and a mess of tastes, you have the almond extract and crumbs mixed with both cherry and pistachio cream and chocolate and vanilla with more almond crumbs.

PPCC: Best of three, maybe too much frosting.

DRC:Just why?

Challenge Goals: 4/5
I'm having trouble considering the FSP a cupcake mostly because it's made of frozen cream , the other two are definitely cupcakes.

Hey SirSpice!
No, I didn't use their recipe. I looked at a lot of different recipes, and I decided to use the celery juice curing method. I ran a small head of celery through the food processor until it was pulp. Mixed that with about a 1/4 cup of coarse sea salt, 1/8 cup brown sugar, 1/8 cup coarse ground pepper, a handful of fresh lemon thyme from my little herb garden, 6 garlic cloves (roughly minced), and 1/4 cup pickling spices. Rubbed that mixture well all over the pork belly and sealed it in a large ziplock bag, getting as much air out as possible. Then let it cure in the fridge for 8 days, turning and massaging it every day. Took it out, rinsed it well, then smoked it for 2 hours over half applewood, half hickory chips. Let it cool, then sliced it and divided it up into a few days worth packs, and froze the rest. It's really tasty, I have to say, and not difficult at all, I don't know why I didn't do it sooner, but I'll be making it myself from now on. I still want to experiment with flavors and smoking woods, too.

How in the world would you get botulism? It's cured and smoked meat. Do you not understand how curing works? If you're worried about that, just leave out the garlic. It would still taste fine without it. But honestly, a week in the fridge isn't enough to give you botulism. Also, there's a shit ton of salt and some sugar in meat cures, both of which are hygroscopic, making an inhospitable environment for bacteria by drawing moisture out of cells.

There is soda in the frosting. There is sugar in soda.

>> No.4488421

>>4488401
I have to say, it only had 1/3 cup of soda in it. Still much less sugar than the other cupcakes. I agree with the other poster, how could that possibly give someone 3 types of diabetes? If someone was going to hate on my frostings for being too sugary, I'd think they would have picked the Dulce de Leche. I mean, it's caramelized sweetened condensed milk for god's sake. Now, the Whipped Chocolate Ganache had zero added sugar. But, it used semisweet chocolate, so there was still sugar in it. At any rate, as someone who actually ate them, the Doritos Locos cupcake frosting was definitively the least sweet.

>> No.4488430

I didn't mean to imply that it had more than others, and it certainly wouldn't cause diabetes even if you ate them daily, simply that it does indeed have sugar in it.

Oh, okay. Well that other guy was responding to the post that said the "taco frosting gave me three different types of diabetes". I just assumed you were referring to that. But nevermind! Yes, it does have a little sugar in it from the soda. But it really just tasted like citrus-y sour cream, with a slight bluish-green color. The whole point of that cupcake was it was a tribute to /ck/, as my home board, and if you were around when the Locos tacos came out, you'll remember the 9999999 threads about them, and as everyone knows, apparently Baja Blast is the only acceptable drink from Taco Bell, lol.
Those were actually damn tasty. I was worried how they would turn out, but my workmates (who got to eat the majority of the cupcakes I made) really liked them. Those, and the Frozen Spumoni cupcakes were actually the most popular. Although a lot of them like the Dulce de Leche Frosting.

Okay guys, so here we go. This is basically a New Orleans cupcake trio, inspired by some of my favorite things. (If i was Oprah, I would give you guys this stuff.)

First on the plate is a Caramel/Praline cupcake. (Yes I know Pye did praline already, but I already planned...so...yeah.)
Its a caramel/pecan cake with a brown sugar/pecan icing which is super tasty! On top is some ground pecans and a homemade praline.

Up next is the Bavarian Cream King Cake cupcake. It's made like a traditional king cake, but in cupcake form with Bavarian cream as the filling. Glaze on top with sprinkles and, of course, a plastic baby.

Lastly, I have the Hurricane. It's basically an upside down hurricane. Usually garnished with orange slice and cherry, so the cake is orange and rum with cherry filling. The glaze is pretty everything that goes in a hurricane (passion fruit, orange juice, grenadine, splash of lime, rum.

Verticals coming. I didn't put measurements because I threw away my papers and I'm on the road of getting drunk. If you want measurements just ask and I'll figure it out when sober.

The mugs are very clever, I accept them as "cups", the frosting bit is stretching it on the hot chocolate cake. I will except the cream and the jelly/marmalade as "frosting" though. No points off for it, but that vertical is very difficult to look at. The thought that you just randomly tossed ingredients in together without some sort of measurement makes fear that they didn't taste very good. Steaming them makes them more of a pudding than a cake. The tea cake is the most intriguing though. I would like to see some more development into making it a proper cake. The presentation on this is dismal, it isn't attractive or enticing.

Interiors of both looks nice, although it might have been interesting to see the ice cream in the Baked Alaska go into the cupcake itself. My other complaint is that the Baked Alaska meringue is too dark and looks burnt and unappealing. The Krembo cupcakes are very impressive and the chocolate shell is thin. I'm not partial to the white chocolate, but that's a personal preference.
