I have a quick question, wasn't sure if this should be here or /sci/.

Is it safe to boil meat, like chicken? A friend of mine told me that boiling water does not go above a certain temperature and therefore can not kill off the bacteria.

The reason boiling meat isn't popular is because dry heat and high temperatures give the flavors you crave.

Your friend is correct if he's talking about re-heating leftovers that have been stored at an unsafe temperature.

You'll kill all bacteria at 100 celcius but you can't destroy spores of botulism if they're already present in the food.

Absolutely every published soup recipe calls for bringing the water to a boil initially for sanitization. After you have achieved the boil you back off to simmer to not cook off volatile essentials unnecessarily.

if there are bubbles coming up, then the water is boiling. while the entire pot is not necessarily at 100 celsius or higher, parts of it are. convection will do the rest.
