I'm cooking Italian sausage tonight.

In the past, in the interest of food safety, I would boil the raw sausages for an hour, then sear them brown. Then I heard that overcooking them destroys a lot of the flavor. So, I'm thinking of boiling them for 30 minutes instead, then searing brown as usual.

I have:

No, if you can't grill them, this is how you should cook them.

>Find pan with tight fitting lid
>Put sausage in pan
>Add about a quarter cup of water
>Let them steam for 10-15 minutes
>Take lid, drain excess water and brown/crisp the skins (usually another 10-15 minutes.

These plebs don't know what they're talking about. There's nothing wrong with boiling sausages then searing. 30 minutes, however, is overkill. 10 or so would be all you need. Also note that some of the preservatives in store bought sausages will cause a fully cooked sausage to still appear slightly pink. If it feels firm and smells fully cooked, it's probably done.

BOILING any kind of meat for even 5 seconds will screw up the texture. Poach them in water that's on the verge of simmering. They'll be fully cooked in 20 minutes at most.

Why not cook them in a pot with onions garlic peppers tomato sauce, then pulling out the sausage and finishing them on the grill. You'll have great tasty sausage, and a great pasta sauce.

I just toss dem sausages in a pan with 2"ish sides (about the height of the sausage), add water less than halfway the height of the sausages, simmer for 10 minutes covered. Uncover, keep simmering until water is evaporated and sausages brown, turning them as they do so.

If your sausages are brat thick, I totally understand brah. What I usually do is I pick a beer, aromatics, broth, and spices to boil them in. I usually do chicken broth, onions and garlic, whatever beer type I have in my fridge that I think would go well (one time I did a raspberry cellis, which actually turned out delicious), and whatever spices I think will compliment the spices in the sausage.

For Italian sausage I'd probably do a lighter beer like a lager or an amber, or possibly a hefeweizen, onions and garlic, chicken broth, and some salt, pepper, a pinch of rosemary, oregano and fennel, and a good amount of basil and parsley. Fresh is a plus but not necessary. If you want to be really creative, add a pinch of anise or juniper berry.

Strain and save the broth to create a delicious man soup. Just chop up some sausage (if you have any left), toss in some veggies and rice or potatoes, and enjoy.

And screw the other plebs that judge you. Do what tastes right. Creativity is destroyed by people telling you what you should and should not do.

AFAIK, for euro sausages you fill the pan 1/3 of the way with water, simmer, flip, simmer and fry or roast. Then you add your sauerkraut to the pan, give it a good 'ole stir, and plate.

You just need to hit an internal temperature of 160F for safety. You don't need to obliterate them.

Im a chef. Heres what i think: You are insane. You have been ruining sausages everytime you have ever cooked them. People like you should not be allowed near sausages.

Unless you are buying dodgey as fuck sausages from some dude in an alley, in india, then dont worry about parasites and shit. You should always have it cook right through, especially with pork, but this is not hard to achieve with just a normal frypan or bbq.

Always cook sausages slowly. A proper, raw sausage cannot be cooked properly in less than half an hour(in a frypan). Never stab holes in your sausages, either. If they are large sausages, chuck in a handful of water half way through cooking and put over a loose lid for 5 minutes.

Sausages are great when cooked properly.. unfortunately, 95% of people are retards, and do stupid things like boil them for an hour.

Then dry off on the grill.
