With Nathan's I just grill them and add a bit of dijon mustard or perhaps a vinegar-based hot sauce. Sometimes a little cheddar sometimes as well. I don't want to mask the flavor of the meat too much.

Boil them 7-8 mins to make them plumper. Then empty water and cook in the pan until crispy on 2 sides.

I know this is fucked, and stupid, and both. But I put my hot dogs under the broiler, set to low, highest rack, with the door open, keeping a careful eye on them, turning them after a few moments as they start to brown on on one side...

I prefer a hot, evenly roasted Jumbo Size Hebrew National Beef Frank on an untoasted Martin's potato roll. A single bead of Spicy brown Mustard and a single bead of tomato Ketchup in a zigzag pattern along the exposed hot-dog. Pickle relish only if I can find a fairly dry variety.

I call it the All-Yorker Dog as it encompases tastes from both western NY Sate and NYC
>hebrew national 97% fat free hot dogs (I like the spices they use to make up for the missing fat)
>on a hot grill for 5-7 minutes until just a bit of charring
>grill bun with bit of butter/margarine/whatever
>remove from heat, add shredded cheddar and Frank's redhot to bun
>put in hot dog
>single line of Goulden's Deli Mustard down dog

Okay, here is what I do, feel free to steal this recipe:

>take hot dog out of package
>boil until it plumps up a little
>remove from water
>butterfly it
>put ketchup inside, then seal it back up with toothpicks
>microwave for 10 seconds
>remove toothpicks, add mustard inside
>re-pick
>sear both sides in a pan coated in margarine
>remove from pan when both sides are seared
>remove toothpicks!

Bun:
>coat inside of bun with margarine and pepper
>microwave for 5 seconds
>sear the inside of the bun

Combine the two, add jalapenos, and enjoy.

Griddle with medium heat. Cover and grill-steam with splashes of water. The simmer then grill method works great too. I'm a big fan of introducing water. A good steamed bun really makes it also.
