Since I discovered that lentils are essentially the cheapest source of protein around, I've been eating them pretty regularly. What do you fellas like to do with your lentils?

I really like a lentil kale sausage soup I make, but it's often a little bland on the flavor. I use red wine and chicken stock, but it just ends up missing a good kick.

Lentils, 250g (about a half pound US)
Olive oil, 80ml (about a third cup US)
Garlic, peeled, a handful of cloves
Water, 2 litres/quarts
Parsley, rough torn, two handfuls of leaves and stems

Combine all ingredients in a pot.
Bring to the boil.
Lower heat to maintain a live simmer.
Simmer, undisturbed untils lentils are cooked through, about 30-40 minutes.
Salt to taste.

That's it.

I never actually calculated it, but I thought beans were, along with eggs, and perhaps whey protein. (This all in the U.S. of course where our food is subsidized)

I like to let them soak overnight with rice, so as to eat something that contains all essential amino acids. Then I cook them with it in the rice cooker, add some stuff to it, and eat.

Make sure you buy rice that has 7ish grams of protein per 100 g if you want to go that route, though.

Lentil-Ricotta “Meatballs”

makes about 18


2 cups cooked lentils, pureed

2 large eggs, lightly beaten

2/3 cup plain breadcrumbs

1/2 cup fresh ricotta

1/4 cup grated Parmesan cheese

1 1/2 teaspoon chopped parsley

Salt and freshly ground pepper, to taste

Canola oil for frying

Marinara sauce, optional

Add all ingredients to a deep bowl. Mix very well, using hands or a wooden spoon. Cover and refrigerate for two hours or overnight.

When ready to cook, shape mixture into 1 1/2-inch balls. Heat about 1/2-inch of oil in a nonstick skillet over medium flame. Add shaped “meatballs” and cook until browned all around, turning only once. Transfer to a paper towel-lined plate and let excess drain off. Add to simmering marinara sauce if serving immediately, or store in a tightly covered container up to three days.

These wonderful "meatballs" have the same texture as real meatballs, and have the most pleasant flavor I've ever had come from a lentil.

I soak them for a day because they don't make me fart up a toxic gas that way.

I do one chopped onion and 1-2 cloves garlic per cup soaked lentils, and with however much of whatever vegetable I feel like, often broccoli or peas. Then, from most to least: curry powder, black pepper, cayenne pepper, cumin, ginger, salt. Simmered until everything's done. Then I add a large-ish pat of butter (no fat in this shit, helps round it out) and adjust spices. Makes a reasonably pleasurable lentil slop that goes well with rice.

In a similar fashion, you can make lentil patties pretty easily. I chop up garlic, carrots, and green peppers for mine. Takes a bit of practice to find a good balance between egg and breadcrumbs to get a good patty, but once you do they're pretty nice.

Not even a vegetarian, but it's nice to have a few things you can make when you're cooking for one.
