Bought a lot of dry beans today that I will soak and boil tomorrow. I'm making a lot, for storage. How do I store them the best way, though? After boiling they need to dry before they go in the freezer. What's the best way to dry them?

Why would you soak beans you're not immediately going to cook? The best way to store beans is to keep them dry and soak them as you need them.

You could do that. You could also can them--using a pressure cooker and either mason jars or metal cans. If you can them they can be stored without refrigeration.

If I don't use the cooking water, since it takes up a lot of space, is it OK to just strain them after cooking, let them cool down and then freeze them in small plastic bags? I don't want mashed or flour-ish beans.

I don't want to put beans filled with water in the freezer as it'll freeze as well. I just want to freeze my cooked beans.

Oh ok. I know that cooked beans will keep a decent amount of time in the fridge (at least as long as any cooked vegetable). So freezing them might work. Try it with a small quantity and see if it works.

Yes. That should work. If you're really concerned about texture, get some dry ice and flash freeze them in a cooler before moving them to the freezer.

Some might people, but generally I don't think most people will do that on a regular basis. Aside from this overestimation of people, there's also the matter of OP then having to boil the beans when he gets home, delaying dinner by up to two hours, which might not be feasible.
