Mori Soba.

Though, I can't guarantee it's called that everywhere.

It's soba (buckwheat noodles) served ice cold with a subtle dipping sauce. Often comes with wasabi (to mix into the sauce), spring onion, toasted seaweed, and tempura flakes as garnish.

Amazing summer time dish.

I like Japanese food, but is there any food in the whole of asia that's actually healthy? Seems like everything revolves around white rice, white rice noodles, and insanely high sodium soy sauce and MSG

It's a summer dish and they're not just 'cold', they get cooled in ice water right after they're made so they don't stick together weirdly like normal noodles if cold.

To add to that, it also washes them well so they're pretty much starch free by the time they make it to the plate.

It's fucking delicious.

Of course, soba is also used in a ridiculous amount of dishes, which includes serving them hot. As a noodle in and of themselves, they are pretty amazing.
