There is no bacteria used for fermenting wine. Yeast is used and yeast are a single celled fungi, that is eukaryota and not prokaryota.

It really doesn't. Not compared to all the styles that are not Reinheitsgebot compliant. every adjunct, every non-yeast fermentor disqualifies it. So a great number of ales are off limits.

What's worse such restriction stymies innovation and leads to stagnation. German beer will have a hard time getting better because breweries cannot try new things and still worship the golden calf that is Reinheitsgebot. Of sure there'll be SOME advancement, but for the most part, it'll be lager, pilsner, and a bit of ale.

as a homebrewer with access to most of the wealth of american craft beer, i can safely say that you don't need adjuncts to make a huge diversity of beers. yes, prohibiting rye and wheat is overzealous, but you don't need them to make good, better, and unique beers.

i'm not saying the Reinheitsgebot is a good thing. but it set brewing off in the right direction: focus on the four ingredients first before you go off experimenting. without that focus it'd be like trying to learn free modal jazz before you learned a basic sense of melody and swing. there's something to be said for the rudiments and how far they can actually go in the hands of a master.

i guess we can agree to disagree here, but you can't say barley, hops, yeast, and water are limiting when there are hundreds of varieties of each, yielding four times that many combinations thereof.

Hop varieties are giant as well.

Yeast is another. Most American beers use very neutral yeast, when there are hundreds of strains.

These in combination might be restricting, but certainly not boring. Limiting perhaps, but again. there are s many flavors you can get with the main ingredients without using extra sugar, coffee beans ( biggest joke ever), chocolate ( again, stop doing this brewers) or some kind of fruit. Fucking fruit beers are the worst.

BMC beers use a very neutral yeast, but most micro and craft breweries use specialty yeasts specifically FOR the flavors they impart, or the ABV the produce, or any number of other factors that are specific to specialty yeasts.

Hops are all over the damned place, agreed. I note that the overspecialization and over breeding of the noble hops traditionally used in Germany has led to a blight on those and many other similar hops. Again, we see that the freedom to experiment has led to improvements in beer making as the newer breeds being grown in America and elsewhere are heartier and healthier.
