My city dish is a steak preparation called "Steak De Burgo"

Its actually kind of a fun little dish. Nothing fancy, just seared beef tenderloin with a pan sauce of cream and herbs. Whats fun about it is the local lore. Several people claim to have invented it, but no one really knows shit about its origins or original recipe. Every Local chef has his own take on it. And most of them claim theirs to be the "one true de burgo." pretty much every local steakhouse has a De Burgo on the menu, and i have found locals are not even aware its a local thing. I have only found it out of Des Moines a few times.

To make:
beef tenderloin (i like to use 2 4oz cuts for super fast searing)

Clarified butter

about 1 tbsp of finely minced fresh rosemary and thyme

1/2 a diced shallot

small pinch of minced garlic

dry white wine

>saute pan super insano hot
>pour in clarified and sear the beef hard.
>get a nice crusty sear and keep them rare/MR
>take maybe 60 seconds, then let the steaks rest somewhere warm
>throw shallots and garlic in the red hot pan, they will cook fast so be careful.
>when the start to caramelize, deglaze pan with copious amount of wine
>before wine is all reduced away, throw in the herbs and finish it with a dose of cream.
>reduce till you have a nice thick cream sauce
>serve sauce over steak

Like i said, nothing fancy, just a bit of local kitchen lore. Really, i think what chefs like about it is its a great test. The recipe is simple and the success or failure of the dish rests solely on execution. I have seen this administered as a test or question during interviews a few times.

"Panfish" is just a broad term for any kind of fish that doesn't typically grow bigger than a frying pan, or sometimes just any fish that is most commonly pan-fried. Around here we've got some places with choice bluegill, crappie, redear, yellow perch and the sort. White perch when they're running. Et cetera. A lot fish that fall under the category of freshwater "sunfish" (largemouth, crappie, blugill, redear, pumpkinseed, rock bass) are really feisty and great for sport-fishing too.

I've fished a few places in the tri-state area and some lakes up in PA where I've pulled out crappie close to the size of a standard sheet of paper.
