What's the best way to cook filet mignon with just a stove? I was going to sear them and finish in the oven, but I just found out my oven isn't working.

I like them rare but medium rare is good enough too. They're 1.25 inches thick, btw.

I have an electric stove so even if I turn down the heat to low, it's still going to remain at high heat for a while. Should I have another burner set to low and just switch it off when the time comes?

A good approach would be to start them on low heat for a few minutes per side, flipping frequently, then searing them on high when you are done.

Cooking them on high, then finishing on low still on the stove will pretty much ruin any crust you hope to get out of it.
