It's really just so simple though Op, that it's hard for people to take it seriously.
In theory you could make most dishes into vegetarian ones by simply changing the meat up.

Now if you wanted anything specific, we'd be at more liberty to help you. If you're just looking for generals though, I'd say google it first and then come back and ask how you can make those recipes better.

Make a roasted vegetable sandwich with a soft cheese. Bell peppers, zucchini, squash, portobello etc.

Another thing I like to do is oven bake a whole portobello with some balsamic and olive oil and top it with sauteed leeks and spinach. Got that one from Martha Stewart and it's pretty good.

Any part of 4chan is a bad place to mention anything related to vegetarianism/veganism - simply because most people here don't like being told what's what and ignore every kind of source you provide. Mostly like arguing with retarded kids on drugs upside down in an arbitrary roller coaster. One might as well be trying to argue with with a stutter on a Tourette's conference.
