Can I make cornbread without buttermilk? I've never seen it in the shops here.

I regularly make biscuits with water so I don't see why Cornbread would be any different.

You can use half and half, or regular milk if you want. I know there are some recipes that don't call for anything of the sort.

Im in Japan and I had to make it myself.
One cup of milk to one tbsp of lemon juice or vinegar. Not the same thing but close enough

Well, I make biscuits with alternative sources of thick liquid slightly acidic dairy, and I find that replaciing dairy with water leaves food quite bland. Also, cornbread is different from biscuits because corn is nasty.

So, safest bet, mix milk and yogurt.

To make buttermilk from regular milk :

4 1/2 teaspoons white vinegar, or fresh lemon juice
1 cup milk

Place the vinegar in a glass-measuring cup, and add enough milk to make 1 cup total liquid. Stir to combine and let stand for 10 to 15 minutes (The mixture will begin to curdle).

Use as needed in a recipe, or cover and refrigerate until needed.

Dude 80% of the people I know don't even use buttermilk they use milk, one egg, cornmeal and a bit of ap flour. also look into johnny cakes/hoe cakes/journey cakes. They are god tier and rely on same ingredients.

buttermilk = god tier, but not necessary by any means; just use whatever dairy milk is available.

I won't overwhelm you with the details, but let me tell you, biscuits can be awesome with fermented dairy other than buttermil!
