I grew up in the South. I'm probably forgetting something.

I eat fried food way more than people tell me I should, but I don't eat five pieces of catfish, either. I'll have a piece of fried catfish, steamed rice, baked beans, greens, some raw onion and tomato, etc.

It's a luxury to have on the plate and you make it last the entire meal or eat it at the very end.

The other night, my friends and I caught some speckled trout in the Gulf of Mexico. So that night, while we had the fryer hot, we breaded some fresh-picked okra, made onion rings, and even fried potato chips, sliced translucent courtesy of my immaculately maintained Wusthof. My buddy's girlfriend even did a few oreos for good measure. Great food and plenty of pale lager made the night a frying event we won't soon forget.

One thing I ate sticks out.

When I went to Japan I was served these little fried cheese balls, not sure what was in them but it had a very creamy and neutral flavor. It was served with raspberry preserves, and was one of the best non-Japanese dishes I had while I was there.

1 pound okra pods, stem ends cut off, sliced 1/4-inch thick. salt, cold water, yellow cornmeal, salt and pepper (black)

Cut the okra into a bowl, then sprinkle liberal amounts of salt on and wet it with very cold water. Refrigerate the okra for at least 1 hour. Drain it and roll the okra slices in cornmeal seasoned with salt, pepper, and any herbs until it's well-coated. Fry it in a deep skillet in about 1/2-inch of hot oil until that shit's golden brown. Drain out the grease first because holy shit there's gonna be a lot. Okra is great with any kind of dip, and especially with marinara. It's also a decent side with any pasta that has a tomato-based sauce.

There's a mexican restaurant one town over which I used to live by and they deep fry the tortillas for tacos so that they are fairly crunchy yet oddly still pliable. It's a bit messy but so damned good.

They are fantastic, but it seems like a lot of people don't know the glory of fried pickles. When I was in San Diego, the county fair didn't even have them available and FRIED FOODS ARE EVERYWHERE.

I ended up asking one of the lead fry-food purveyors if they would fry a pickle up for me, and the nice man even said he'd do it for free if I brought him a pickle. Boy, was it delicious.
