Buttery Bacon and Boneless Pork Rib Burrito

First step: Make rice! Then let it sit for 12-16 hours. Fry up in some butter (I did 2 cups rice and 3 tablespoons butter on high)

Next: Make guacamole! Dice up 1/4 onion, 1 medium roma tomato, 2 garlic cloves, 1/2 jalapeno pepper, and two avocados. Mash together, add a dash of salt and a squeeze of lemon.

Next: Cook your bacon! Make it nice and crispy.

Finally: Cut boneless pork ribs into thin strips, fry in the bacon fat leftover from cooking bacon!

On a large tortilla, layer rice, bacon, rice, guacamole, pork. Wrap, and in the case of my monster, pin it closed by poking a hole through the overlap and sticking in a couple of sprigs of fresh parsley. Serve with fresh salsa or chili sauce.

I rolled Umami and Sour... and really didn't feel like cooking sea food. So I made Chana Masala.

The cumin, ripe tomatoes and spinach are strong sources of umami, on top of the chickpeas. The lemon juice gives it a nice sour note.

If I was not aiming at making sour an important part of the dish I would only use 1/2 lemon worth of juice.

Since I kinda bombed last challenge I wanted to step up this round. So I chose to make sweet potato agnolotti with sage cream, brown butter, and prosciutto from The French Laundry Cookbook. I think it was a pretty good choice considering I rolled creamy and buttery (I ended up using 1 stick of butter).

Overall it was pretty great. The agnolotti didn't turn out quite as I wanted it but I'll get it right the next time (I'll definitely make it again). I find way more difficult to get the thickness of the dough right with a rolling pin compared to a pasta machine.

Agnolotti is superior to normal ravioli when it comes to getting the filling in. So easy and without any airpockets.

Pork filet mignon marinated in soy sauce and quatre épices, browned in its honey crust, with a sweet potato galette.

Soy sauce and meat is umami, honey is obviously sweet.

And the honey is from wild flowers from Jura, a mountain in France (and from a familial company.). I asked recommendations for an honey that would caramelise and go well with meat in a honey grocery shop, 'cause we totally have that everywhere here...

For this round I rolled Spicy and Earthy. Fortunately the two flavors are very well paired. Mushrooms, Beans, and Thyme are very earthy ingredients. The Chipotle peppers, Chili Powder, and Paprika are both earthy and spicy. This dish was delicious, the bird was moist and the skin was browned perfectly. The lemony flavored Thyme Jus made a fantastic sauce. Thank you.

So, to recap I rolled Sweet and Sour and I didn't want to go for the obvious and make a Chinese style Sweet and Sour Pork/Chicken/Beef. So I went for the less obvious route, I decided to do a salad.

I made a apple gastrique with fresh apples, apple and honey cider vinegar, brandy, sugar and a little lemon juice to balance the flavors out. I sliced the apples and diced some up roughly, cooking the diced apples until they were tender before adding the sliced ones, so that the apple slices would still have a bit of crunch to it.

I then tossed the salad with this apple 'dressing' while it was in the pan, allowing the residual heat to just slightly wilt the greens before serving them.

For the pork fillet, I marinated the pork chop with some salt, pepper and a touch of the apple/honey vinegar and some apple brandy for a few hours before pan frying it and allowed it to rest while I plated the salad before just sliding it on top. I tried a version where I sliced it first but it just did not look as nice.

In the end the elimination is up to the judges. I'm still in the contest but I'm probably not going to participate next year. It seems like there's a lot less focus on actual cooking and more on producing food porn and crowdpleasers. Also the rating seems a bit too random.

a chef has to play to his audience. food should be attractive and recognizable as being something the judges would want to eat since there is no actual "tasting" going on. I can figure out who you probably are and i can tell you that, overall, the food you produce is pretty amazing and thoughtful. I hope you win!
