Looking for soup suggestions.

So I cook for my family practically every day. I keep getting pestered about not cooking soups. See, I've always hated soups because the ones I had as a child were bland and tasteless watery mess and water for me is not dinner. But with fall approaching and my need to eat healthier/lighter meals, I'm thinking of cooking at least 1 soup a week.

I only have 1 rule, they can't be watery, there needs to be some fill to them. I have access to some good stock bones and offal at my local grocer, which I will definitely use. I'm thinking of trying my hand at things like pozole or peas and barley soup with ham. Any other suggestions?

IDK I have only had soupa de res because im half mexican and its delicious

i have never really had beef soup which sounds gross to me.
but soupa de res is delicious..

If you dislike watery soups, just make make soups like fennel, potato, broccoli, or leek.
Serve with bread and stuff like bacon for the crunch factor.

chuck loads of carrots, an onion, a couple of potatoes, a squash (roasted is lovely),peeled tomatoes (tinned), a bit of ginger, ground cumin seed, and coriander to a large pan, boil it to fuck and then blend it. and eat it with some creme fraiche.

Potato Bacon Soup
6 strips bacon
1 yellow onion, chopped
2 garlic cloves, minced
2 large russet potatoes, cubed
2-3 cups of chicken broth (fix this next time you make it)
1/2 cup half and half cream
1/4 stick butter
salt and pepper to taste
2 teaspoons red wine vinegar
1/4 cup green onions, sliced
1/2 cup cheddar cheese, shredded
Fry bacon in large saucepan until crisp and remove. Add onions and fry on medium-high heat until soft. Then add the potatoes and salt and pepper and cover, stirring often. Fry for 15 minutes, until the potatoes are soft.
Add the garlic and fry for 1 minute and then add the chicken broth. Simmer for 10 minutes and then mash potatoes or use an immersion blender. Add the butter and half and half and crumble 4 strips of the bacon into the soup. Heat throughout, then add the red wine vinegar.
Garnish with green onions and crumbled bacon on top. Add cheese if necessary.

Beer Cheese Soup
1 1/2 teaspoons butter
1/4 cup chopped yellow onion
1/4 teaspoon minced garlic
1/2 teaspoon Worcestershire sauce
1/2 (12 fluid ounce) bottle light beer
1/2 (14.5 ounce) can chicken broth
1 tablespoon and 1 1/2 teaspoons cornstarch
1 cup half-and-half
1 cup shredded sharp Cheddar cheese
Melt the butter in a large soup pot over medium heat. Add the onion, garlic and Worcestershire sauce and stir well. Add the beer and raise the heat to high and boil for 3 minutes to evaporate the alcohol. Add the chicken broth and bring the soup back to a boil. Lower the heat to medium-low and simmer.
Combine the cornstarch with 3 tablespoons water and stir until smooth. Set aside.
Add the half-and-half and shredded cheese to the soup. Stir constantly until the cheese melts. Then stir in the cornstarch mixture. Stir constantly until the soup is thick, about 2 minutes. Serve garnished with bacon bits.

Chipotle Turkey Pozole
1 tablespoon olive oil
1 onion, chopped
1/4 cup minced chipotles in adobo
1 garlic clove, minced
1 15 ounce can diced tomatoes
salt and pepper, to taste
8 cups chicken stock
2 cups cooked turkey, shredded
1 20 ounce can hominy, drained
2 bay leaves
1 tablespoon dried oregano
pinch ground cloves
1/8 teaspoon cinnamon
toppings; shredded cabbage, avocado, sliced radishes, chopped cilantro, queso fresco, lime wedges, tortilla chips
Heat olive oil in a dutch oven and add onions. Cook until translucent and then add garlic and chipotles. Cook for another 3 minutes.
Add the tomatoes, turkey, hominy, stock, salt and pepper, bay leaves, oregano, cloves and cinnamon. Bring to a simmer and adjust to taste. Simmer 45 minutes.
Serve with toppings.

Minestrone Soup
2 tablespoons olive oil
1 garlic clove, minced
1 onion, chopped
3 carrots, sliced
2 cups chicken broth
2 cups water
1 (15 oz can) tomato sauce
1/4 cup red wine
1 (15 oz can) kidney beans, drained
1 cup green beans
1 cup packed baby spinach
1 zucchini, chopped
1 1/2 teaspoons oregano
1 teaspoon basil
salt and pepper, to taste
1 cup seashell pasta
1 tablespoon grated parmesan
In a dutch oven, over medium low heat, heat olive oil, onions and carrots and saute for 5 minutes. Add garlic and cook for 3 minutes.
Add chicken broth, water, tomato sauce and red wine. Bring to a boil, stirring frequently. Reduce heat to low and add kidney beans, green beans, spinach, zucchini, oregano, basil, salt and pepper. Simmer for 40 minutes or longer.
Add pasta and cook until done, about 15 minutes. Garnish with parmesan to serve.

3 cloves of garlic, minced
1 onion
300ml creme fresh
dash of worcestershire sauce
1/2 teaspoon of onion powder
teaspoon of dried basil
1/2 teaspoon of salt
1 teaspoon of ground black pepper
1 tablespoon sugar
1 tablespoon of oil
1 tablespoon of butter

Put the butter and oil in a large saucepan and heat.
Chop the onion and add to the pan. Brown the onions. Add the garlic and chopped peppers.
Add all the other ingrediants apart from the creme fresh.
Simmer for 30 mins, stirring occasionally.
take off heat and cool.
Blend and return to the saucepan. Add the creme fresh and stif till combined. heat up and serve.

100ml of fresh orange juice
1 tablespoon of oil
1 tablespoon of butter

Chop the onion and add to the pan. Brown the onions. Add the garlic and chopped peppers.
Add all the other ingrediants apart from the creme fresh.
Simmer for 30 mins, stirring occasionally.
take off heat and cool.
