I made chicken Parmesan and put it on a really nice bun with some hot peppers. Was going to have some steamed green beans with them but didn't get home until late and we didn't feel like it.

I like a stewier/saucy saag.
I make it by a bizarre combination of Northern style (the very concept of saag is Northern, though also enjoyed in some parts of the Southeast) and Southwestern (powdered spices).
If I'm using paneer (I prefer lamb/mutton/goat or fish, actually), I coat it in powdered spices, sauté in clarified butter with chilies and ginger meanwhile puréeing mustards, kale and/or spinach with broth/stock or plain water, then add it to the pot.
Reduce until thick, salt to taste and eat with bread.

Interesting, I'm liking your method of doing the paneer, I generally get it going in ghee then add garam masala and toss it a little in that, coating it in the spices, but I'm going to give it a go pre-coating it since I reckon that's what I'm going for (but have failed slightly so far). Not the person who posted that image but my mexican rice always turns out fine.

1. Saute some onions and minced garlic. Onions should be translucent
2. Add 2 cups of uncooked rice and some more oil
3. Cook rice till it forms thin film around each piece (there is a fancy name for this I think, I don't know, not professionally trained). Rice should be kinda clear.
4. Once rice is cooked a bit, add 4 cups of chicken broth and 1 cup of tomato sauce (I suppose you could also blend some tomatoes offhand and use that instead).
5. Bring the whole mixture to a boil and then cover and simmer for 20-25 minutes.
6. Fluff out the rice as it finishes and voila.

I think there are a lot of different ways to make mexican rice, but that's how I do it and my friends/family think it's okay (not that they know anything about cooking).

Sorry bros I sat dawn to eat my as asado dinner right after I posted.
I'll start by answering the rice question.
You will need
1 cup of rice
1 can chicken broth
1 small can of tomato sauce
1 diced carrot(optional)
Sofrito(throw half a jalapeño deveined, 1 garlic clove, 1/4 yellow onion, 1 small tomato and some cilantro in a food processor)
In a 3qt pot put a table spoon of olive oil and
set the heat to high. One the oil is hot throw the cup of rice and stir until the rice turns a bright white.

Add the sofrito and stir for like 10 seconds. Pour the chicken broth, tomato sauce and the carrot. Add salt to taste.

Cover, bring to a boil and reduce heat to low so it is just simmering. Let it simmer until you see no more liquid. Set timer to 10 minutes. Once 10 minutes have passes remove from heat and let it rest for ten minutes. Enjoy the best mexican rice you've had. It's crazy easy.

The secret ingredient is lard. Do not use oil or butter. It it will not turn out. Also make sure you use a comal aka cast iron skillet to cook the tortillas in.
Protip, leave a little bit of masa left over so after dinner you can make some sopapillas. I hate eating store bought tortillas after getting used to eating home made. There is absolutely no comparison. Homemade are soft and chewy and just crazy good.

Forgot to mention, you had some good elements in your experimental wrap:

1) You tried mixing sauces / salsas or added spices for a unique taste. This sauce mix kept your wrap moist instead of gummy or dry.

2) You added egg. Eggs are cheap, easy to cook and quick. They're good protein and act as the "meat" in the wrap. Also, they're filling.

3) Ramen noodles didn't appear overcooked. They add bulk and are also filling. Their nutrition is nil. For a little bit more money, next time get ambitious and try whole wheat pasta or flavored pasta (follow package cooking directions). Or try this in the Asian section, they usually have "bean threads" or "rice sticks / noodles". Bean threads are made from Mung bean starch, and the others are rice based. The good news? NO cooking. Just soak them in very hot or boiling water, then drain them. Both of bean/rice ones have virtually no taste, so they are really neutral. So you can add them almost anything, or stir fry them. You may need to add some extra spice or other flavoring to your overall dish if you were depending on the seasoning packet from the ramen noodles.

4) Your cheese adds calcium and protein. You melted it well, but not over done. Your tortilla appeared still moist, not dried out.

I bet a lot of regular posters on /ck/ have plenty of cooking experience. But as an "oldfag", I've found most young people don't have any knowledge of nutrition, food safety, or cooking basics. When Home Economics was removed from most schools years ago... it's had a very bad fallout. And we wonder why people are becoming obese? Like I said, that shit is expensive around here (and I admit I do love American cheese very much, come at me). And even then, where my family is from in Mexico we aren't big on those types of cheese you named. I grew up eating cheddar, obviously American, and a lot of homemade goat cheese. Also I hate avocado. Also the beans don't need to be refried all the time, that's more chalupa status imho. Also salsa is not required for tostadas, wtf.

I underwent a jaw operation and now my teeth are held shut together with elastics bands
so I cant open my mouth to eat something proper
it's nearly one and a half week ago i ate something not liquid, in 2 weeks the doctor will remove the elastics so I wont be eating any time soon
man this really sucks
I can't stop thinking about a proper meal and have already lost 8 pounds, so now I 'm practically a living skeleton.
so for now this is all I'll have for dinner for the next weeks
so whatever your eating, sure is better than this
