So I have a 2 pints of cream that need using up by the end of today. Suggestions?

Any recipe goes, but a sweet dish would be preferred.

I doubt it needs to be used up today, expiration dates are approximate. If it smells good, it's fine.

That being said:

-drink it, it's delicious.
-use in coffee or tea as a creamer
-whipped cream goes with fruit, pies, etc.
-potato soup
-mashed potatoes
-any of a number of cream-based sauces (Bechamel, cream gravy, etc.)
-pastry cream, Bavarian cream, custard, etc.

Make a shitload of gelato. You'll need
20 eggs
3 cups sugar
9 cups whole milk
4 cups heavy cream
And whatever flavor you want. For vanilla I would suggest 4 vanilla beans, the seeds scraped out of course.

Whip the eggs with the sugar until they're light yellow, almost white then scald the milk and cream with vanilla
Slowly whisk a cup of the hot cream into egg mixture, mixing constantly so they don't scramble. Pour that back into the pot with the milk, also whisking.
Then heat that until it's thick and coats the back of a spoon but don't simmer it.
Put that bitch in an ice cream maker
???

Isn't the addition of egg the difference between proper gelato and French glacée? While I'm not completely certain (which is somewhat embarrassing considering I'm from Italy), but doesn't gelato omit egg and glacée include it? Am I mistaken?

yeah this is generally true, it's just that italian ice crea, is generally distinguished not by the ingredients but by the mouthfeel of the final product, as with many dishes.
