When you consider the pound per price, it's actually about the same - and it's reasonable to assume some cows produce large ribeyes, some cows don't.

That said, it probably is steak offcuts glued together with meat glue and plumped with saline solution.

The reason people can eat steak rare is because as a hunk of deep muscle, it is assumed that bacteria and parasites that normally infest the digestive tracts of a cow does not penetrate to the meat and as long as the outside of the meat is cooked, the meat is free of such things. However, if you are gluing bits of meat together to make one "steak", that means a part of the steak that could very well have been exposed to the parasites/bacteria now form an inner part of the meat that is going to stay rare.

If I make salt potato and rump roast I know a serving of that sure as shit doesn't compare to hash in regards to sodium (which is usually around 1000mg and above-50% of your daily intake), and cholesterol which always usually hits around 25% of your daily intake. A serving of corned beef hash from a can is usually ~400-500 calories per serving.
