I like three Dijon mustards:

Grey Poupon is a very good, solid, inoffensive Dijon that goes very well in stuff. It doesn't have any domineering flavors to it. I keep a jar around for making mayo etc. Good but not the best for applications where you want to taste the mustard.

Three Little Pigs Dijon mustard ("Moutarde de Dijon" or something like that) is my favorite eating mustard. It's got a very distinct mustard flavor and some nice heat to it. Very good for sandwiches.

Maille is the mustard I buy when I can't get Three Little Pigs, which I can't sometimes as my grocery store only seems to carry it on alternate Thursdays. It's good but not as good as my favorite.

Sadly "Moutarde de Dijon" isn't an AOP so it's mostly canadian mustard seeds and industrial methods (aka shit)
You want the label "Moutarde de Bourgogne" and you'll get real Dijon mustard (Dijon is the main city of Burgundy)
