how can I make egg salad sandwiches that don't just taste of egg and mayo? I want to add other stuff so its less of just soft bland creamy texture and overwhelming egg taste.

Do the deviled egg thing but then add curry powder, garam masala and sriracha. You don't need much of those unless you really want it to taste like Indian food. Also add some celery or jalapeño or something for a little crunch. This works really well with chicken salad too. Oh and I almost forgot, add some celery seed. Celery seed in egg or chicken salad is really tasty.

Traditionally you can add cress/watercress. Other good options are chopped anchovies, olives, some sort of allium like chives or spring/green onion. Or go meat and add fried bacon or sausage. A little strong mustard in the mayo doesn't hurt either.
