Koshering means to drain the blood from an animal carcass before butchering. This is done with the addition of chunky rock salt - also known as Kosher salt.

Most jewish foods are just comfort foods from eastern Europe that have been adapted to jewish law. Most jews don't tend to share traditions including food with strangers, so unless you are Jewish or live adjacent to their communities you won't get to try much of their foods other than the basic bitch polish knock-off dishes or their deli stuff they sell.
I do like those sweet honey cake things they make during the holidays, and won't turn down any deli meats. Also enjoy gefilte fish, both homemade and from the jar. Most people tend not to like it, but I do.
