Taco salads don't typically have rice and beans on the bottom like that. It's actually cheaper for Taco Bell to do that because if they used all lettuce they'd have to stock more lettuce, and they want as little fresh, perishable ingredients as possible.

People think it's a lighter dish, but most of the calories comes from the tortillas, and the idea is you break off pieces of the fried tortilla bowl as you eat it.
