That's not how steel works. I do not think you can have 1 atom thick martensite, so the edge retention would be terrible.

Going by the Project Farm videos....
Drag trough sharpeners seem to cap out at about 300g for cutting a test strip
Drag trough rollers about 200/cutg
If you want to reach mint razor blade territory you either need a wetstone or a sharpening system which takes all the skill out of the sharpening.

That said, pull trough still gets knives to the point where cutting tomato or meat feels good. But if you don't have anything, just buy some cheap wetstone or some Fiskars rolling drag trough

Looks like Project Farm tested the Spyderco Sharpmaker and Lansky System, but not the Lansky Turnbox.
Since it only supports 20° angles and the rods are coarser than the Spyderco, I'm guessing it's around 200g/cut.
Seems right, my knives aren't lasers, but it's good enough. The versatility is also a plus over the pull-throughs.
